A parasitic illness called cyclosporiasis has sickened roughly 1,700 people across 29 states since mid-May, with New Jersey reporting somewhere between 31 and 80 cases as of July 9. Health officials still haven’t pinpointed the food source, which is typical for cyclospora outbreaks since the parasite is hard to detect, doesn’t grow in labs, and often hides in fresh produce that’s long gone from shelves by the time investigators come looking.
